Ideal for special occasions yet easy for daily dinners, this heritage pork dish uses fresh aromatics and a robust sear to deliver an incredibly succulent and flavorful farm-to-table experience.
Ingredients
- 2 Jam N The Ham pork tenderloins (1 lb each)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 tbsp fresh herbs (rosemary, thyme, parsley)
- 1 tbsp Dijon mustard
- 1 tsp kosher salt
- 1/2 tsp black pepper
Preparation
01. Prep Tenderloin
Preheat the oven to 400°F (200°C). Pat the pork tenderloins completely dry with paper towels and trim any silver skin to ensure the herb paste adheres perfectly and the meat roasts evenly for a tender result.
02. Create the Rub
In a small bowl, mix 1 tablespoon olive oil, minced garlic, chopped herbs, Dijon mustard, salt, and pepper into a thick paste. Rub this fragrant mixture all over the pork tenderloins until they are fully coated.
03. Sear Heavily
Heat the remaining 1 tablespoon olive oil in an oven-safe skillet over medium-high heat. Sear the tenderloins on all sides until browned, about 2–3 minutes per side. This step locks in the natural juices and creates a deep crust.
04. Roast and Rest
Roast in the oven for 12–18 minutes (145°F internal). Transfer the pork to a cutting board and let it rest for 10 minutes. Slice into 1/2-inch medallions and serve with pan juices, roasted vegetables, or a fresh salad.
